Until Christmas, find interviews of national associations that are part of Euro Foie Gras. Today, we interviewed Enrique de Prado, President of the Spanish foie gras Interprofession (Interpalm) and Chief Executive Officer of Selectos de Castilla S.A.
Mr. De Prado, which sectors are represented within Interpalm ?
In Interpalm, all the links in the foie gras value chain in Spain are represented (breeding, slaughtering, cutting, processing) and were recognized by the Ministry of Agriculture in 2010.
Structurally, Interpalm's members include representatives of the production sector and the foie gras processing and marketing sector, made up of the following associations:
• Production branch : Waterfowl breeding and fattening companies Association
• Processing and marketing branch : Waterfowl slaughtering and cutting companies Association
• Sectoral Association of Foie Gras (ASEHGRA)
Does Spanish production still rely on the artisanal character of products and exports ?
In general, no.
All companies that are part of Interpalm and therefore most companies in Spain, are large and modern companies that comply with the European model of production in terms of environment, social protection, traceability and food safety.
As for exports, they only represent 9.42% of sales. Of these, 32.6% remain in the EU and 67.4% go to other countries.
Some Spanish brands such as Mas Parés not only offer foie gras as a full-blown food but also as a culinary aid (e.g. foie gras caviar to be placed on fish or pasta). Does this confirm the strong place of foie gras in Spanish gastronomy ?
Around 50% of the volume of foie gras marketed by our partners is for hotels and restaurants, according to data from 2017 collected in Alimarket report "Foie Gras: Return to normal, if influenza does not prevent it" from November 2018.
The hotel and restaurant market is also home to a number of novelties from foie gras manufacturers, who wish to rely on this channel to boost sales, with the positive evolution of catering. This shows the remarkable presence of this product in Spanish cuisine.
