According to estimates by the Institute for Research and Innovation (IRI), sales of foie gras in France grew by 2.6% in volume and 7.5% in value in one year (from 08/01/2018 to 06/01/2019 vs from 09/01/2017 to 07/01/2018).
During the holiday season in particular, the increase is more significant: + 7% in volume and + 9% in value (Nov.-Dec. 2018 vs. Nov.-Dec. 2017). It is above all the whole Foie gras (+ 8.9% in volume) and the block of Foie Gras with pieces (+ 8.2% in volume) which have increased the most in 2018 compared to the same period of 2017.
In a press release, the French interprofession of foie gras (CIFOG) underlines its important work, carried out in consultation with scientific and veterinary experts, resulting in the implementation of new production rules in collaboration with public authorities to secure the the health risk in farms. CIFOG also welcomes the unalterable support of the French, who have a great deal of confidence in the food safety, traceability and taste qualities of the product.
The President of CIFOG, Michel Fruchet, summarizes the year 2018 in these terms: "2018 is an important year for our sector since it marks the return of Foie Gras in the centre of the stage. This is a real satisfaction for all professionals who worked side by side to recover the growth dynamic on a sound and solid foundation.
